Carrot Ginger Soup (serve cold)
This recipe is modified only slightly from a recipe from the Joe Cross “Join the Reboot” program based on the movie “Fat, Sick and Nearly Dead.” I highly recommend seeing this movie!
- 3 cups carrot juice
- 1 ripe avocado
- 2 Tbsp. agave nectar
- 1 Tbsp. minced ginger
- 1/4 tsp. cayenne pepper
- 1/4 tsp. sea salt
- 1/2 cup coconut cream (I find this at Smart n’ Final in the Asian Food section. The good one comes in a box, like a juice box, sorry I don’t have any on hand to give you the name of it!)
- 2 Tbsp. Avocado Oil (or olive oil if avocado oil is unavailable)
- 2 Tbsp. fresh cilantro, chopped, for garnish (optional)
Purée the first 7 ingredients in a blender until completely smooth. Taste and adjust seasonings if necessary. Garnish the soup with a drizzle of oil and chopped cilantro.
Makes 2 servings.
