Linda’s Spinach Salad

 

1 pkg baby spinach leaves

2 Bosch pears core & sliced lengthwise into big slivers

2/3 c. toasted/chopped hazelnuts

1/3 c. dried cranberries

 

dressing:

 

1/2 c. olive oil

2 T. balsamic vinegar

2 t. whole grain mustard

1 t. sugar

1 t. salt

pepper to taste

 

Prepare dressing & soak cranberries in 2 T dressing. Allow to stand 1/2 hour.

Place spinach  & pears in bowl. Toss with dressing. Garish with cranberries & coarsely chopped nuts.

 

I think it’s a really special salad.

 

The other salad is mixed greens + goat cheese + shredded granny smith apple + toasted hazelnuts. Don't know what dressing they used but was olive oil & slightly sweet.
