Sheila’s Grand Finale Cheesecake

Crust:

  • 1 box vanilla wafers

  • 3/4 cup sugar

  • 1 tsp. cinnamon

  • 1 stick butter

  • 1 cup walnuts

Filling:

  • 5 (8 oz.) packages of cream cheese

  • 3 tbsp flour

  • 1 1/2 cup sugar

  • 1 tbsp. orange rind

  • 1 tbsp lemon rind

  • 1 tsp salt

  • 5 eggs, plus 2 yolks

  • 1/4 cup heavy cream

  • fruit filling for topping

 

Instructions:

  • ·      Combine ingredients for crust in food processor.  Put in large 11-inch spring pan, press into edges.

  • ·      Combine cream cheese, flour, sugar, orange rind, lemon rind and salt.

  • ·      Add eggs one at a time.

  • ·      Fold in heavy cream

  • ·      Bake in preheated 250 degree oven for 2 hours.

  • ·      Let cool in oven for 30 minutes.

  • ·      Cover with foil and allow to finish cooling in the oven.

  • ·      Remove from oven when cool.

  • ·      Top with fruit topping.

 

Refrigerate.

 

When ready to serve, remove from refrigerator, carefully remove spring pan and serve.

To get the neatest slices, use dental floss or guitar string.
