Sheila’s Grand Finale Cheesecake
Crust:
1 box vanilla wafers
3/4 cup sugar
1 tsp. cinnamon
1 stick butter
1 cup walnuts
Filling:
5 (8 oz.) packages of cream cheese
3 tbsp flour
1 1/2 cup sugar
1 tbsp. orange rind
1 tbsp lemon rind
1 tsp salt
5 eggs, plus 2 yolks
1/4 cup heavy cream
fruit filling for topping
Instructions:
· Combine ingredients for crust in food processor. Put in large 11-inch spring pan, press into edges.
· Combine cream cheese, flour, sugar, orange rind, lemon rind and salt.
· Add eggs one at a time.
· Fold in heavy cream
· Bake in preheated 250 degree oven for 2 hours.
· Let cool in oven for 30 minutes.
· Cover with foil and allow to finish cooling in the oven.
· Remove from oven when cool.
· Top with fruit topping.
Refrigerate.
When ready to serve, remove from refrigerator, carefully remove spring pan and serve.
To get the neatest slices, use dental floss or guitar string.
